PREPARATION:
1.Boil approximately 500 ml of water
2.Unfold the filter and place it in the Chemex. Rinse the filter with hot water to remove any paper or cardboard flavors and preheat the Chemex. Discard the water after one minute.
3.Add 27 grams of medium-coarse ground coffee to the Chemex.
4.Wet the coffee bed with 60 ml of water, starting from the center and moving outward in circles, making sure all the coffee is evenly saturated. (Pre-infusion) Let it rest for 30 seconds.
5.Do a first pour up to approximately 270 ml of water, from the center outward in circles to create turbulence. Let the water drain through.
6.Do a second, much gentler pour from the outside in, in circles, to create little turbulence with the coffee, until you reach 370 ml total. Let the water drain through completely. (Approx. 4 minutes)
7.Discard the filter and stir the coffee well before serving.

Note: This is a suggested brew and recipe. Feel free to change the grind, pouring technique, and amounts of water and coffee to see the differences that result.
