PREPARATION:
1. Boil approximately 500 ml of water.
2. Unfold the filter and place it in the Chemex. Rinse the filter with hot water to remove any paper or cardboard flavors and preheat the Chemex. Discard the water after one minute.
3. Add 27 grams of medium-coarse ground coffee to the Chemex.
4. Moisten the coffee bed with 60 ml of water, starting from the center and working in circles outward, ensuring that all the coffee is well-saturated. (Pre-infusion) Let it rest for 30 seconds.
5. Perform the first pour to a total of approximately 270 ml of water, starting from the center and working in circles outward to create turbulence. Allow the water to filter.
6. Perform a second pour from the outside in, in much gentler circles to minimize turbulence, until reaching a total of 370 ml. Allow the water to filter completely. (Approx. 4 minutes)
7. Remove the filter and mix the coffee very well before serving.
